A dear friend recently acquired a waffle iron. I don’t like to measure stuff, but with baking types of recipes, you must or things will fail. Here is my waffle recipe!!

Start by plugging in and turning on your waffle iron, probably to the highest setting or 75-80% HOT!! I’m still experimenting with waffles, but my Dad told me to make it hot!! :p

In two separate bowls, combine the following wet and dry ingredients:

Dry Ingredients
2 cups all purpose flour
1/4 cup flaxseed*
1 tsp sea salt
3 tsp sugar
1 tsp baking powder
a handful of sliced almonds*

Wet Ingredients
2 eggs
1 1/2 cups Silk almond milk (you can use regular milk or a milk substitute)
1 tsp vanilla extract**
1/3 cup oil (butter, grapeseed, olive)

**I’d like to try almond extract

Now, whisk them together in a large bowl. I spray the waffle iron with non-stick cooking spray or lightly brush it with oil (grapeseed oil or olive oil). Put about 2/3 cup of batter in the middle of the waffle iron and close the “lid.” The batter is moderately thick, so I think 4 1/2 – 5 minutes did the trick. This should make about 4-5 8-inch circular waffles. Rule of thumb: Cook waffles until the steam stops rising from the iron. You can also judge by the color.

Bite sized pineapple and plantains

That’s simple. While you’re waiting for the waffles to finish cooking, sauté about a cup of diced pineapple and 1 diced plantain  in a skillet. Try bite sized pieces. I used butter. It’s good 🙂 They are done when the plantains take a nice golden color. Slightly brown is okay 🙂

This was my second time making this recipe. I added fresh mint to the saute. I also realized, after the fact, that I had a mango in the refrigerator 🙁 Maybe next time.

When you’re ready to serve, top your waffle with Chobani Greek yogurt and the calypso fruit mixture. I added a little maple syrup.

I have no words for this creation. I was very pleased and we even had leftovers. These waffles freeze well. Don’t be afraid to save them for later use. Try other toppings. I love:

peanut butter
ice cream
whipped cream
to name a few 🙂
